Ingredients:
1 head cauliflower, to fit in your pan
Water
Olive oil
Course salt
Preparation:
1. After removing the stem from the cauliflower, break it up into bite-sized florets (¾ - 1¼ inch). Place the florets in the pan. Add water until half their height, and drip a tablespoon or two of olive oil on top.
2. Bring to the boil on a high flame, and shake the pan from time to time. When the water evaporates, the cauliflower will start to scorch and acquire a mild bonfire flavor. Shake the pan over and again until the cauliflower turns golden on all sides. Sprinkle with course salt. Serve hot.
