Modern Manna Recipe / Caramelized Apple Pie

Perfect for the season, and even more so for Election Day, apple pie is a good way to celebrate America, democracy and the fall.

Makes a 9” pie.


For the pastry:
1.5 cups flour
2 tablespoons sugar
1/4 teaspoon table salt
Pinch nutmeg
4 tablespoons shortening, cold
8 tablespoons unsalted cold butter
3 tablespoons cold water

For the streusel topping:
3/4 cup flour
1/4 cup sugar
5 tablespoons cold butter

For the filling:
6 large Granny Smith apples
1/2 cup sugar
2 tablespoons lemon juice
3 tablespoons apple cider
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon ground ginger
Pinch allspice
Pinch nutmeg
1/3 cup dried currants

To serve: vanilla ice cream


1. To make the pastry, put flour, sugar, salt and nutmeg in the food processor and blend. Add butter and shortening and blend, then add cold water and blend until clumps form. Grease a 9” pie dish. Press the dough into the bottom and sides of the dish using your hands. Freeze for one hour, and up to a day.

2. To make the topping, put flour and sugar in the food processor and blend. Add butter and blend until mixture resembles coarse meal. Keep in the fridge.

3. Make the filling; Peel and core the apples. Cut to 6 sections and slice each sections into 1/4” slices.

4. pour sugar into a non stick pan over medium-high heat and let it melt until it becomes amber in color. Mix the sugar to make sure it does not burn. when the sugar is amber add the apples and mix well (chunks of caramel will form, but they will melt as you keep on cooking the apples.) Add lemon juice, apple cider, spices and currants and continue cooking for about 8 minutes until most of the liquid has evaporated. Let cool for 20 minutes or more.

5. Oven to 350 degrees.

6. Assemble the pie; Pour the filling into the pie dish and cover with the streusel topping. Bake for 45 minutes. Let cool for 30-45 minutes and serve warm with vanilla ice cream on top.
