Kosher for Passover Matza Ball Soup
An easy matza ball and chicken soup recipe.

Degree of difficulty: Easy
Soup ingredients:
6 to 8 chicken pieces or neck
1 onion
2 carrots
3 stalsk of celery
5 bay leaves
1 handful dill
1 handful parsley
4 cloves of garlic
1 green pepper
2 tablespoons soup powder
salt and pepper to taste
Matza ball ingredients:
1 cup matza meal
1.5 cups water
2 eggs
1 tablespoon oil
salt and pepper to taste
Soup directions:
Gently boil the chicken and the vegetables in a pot with enough water to cover all the ingredients over a medium flame for two hours.
The vegetables and the chicken can be strained out in order to get a clear soup.
Matza ball directions:
Combine the ingredients to make a uniform batter and chill it in the refrigerator for half an hour. Gently roll the mixture with wetted hands into small balls and put them in a separate pot of boiling water with a tablespoon of oil and salt and pepper to taste, for 20 minutes.
