Date, Walnut, and Red Wine Charoset

A kosher for Passover variation on the Iraqi charoset of date molasses and walnuts.

Date molasses, or silan (also known as dates honey) is available at kosher and Middle Eastern markets.

Yields 1.5 cups


3/4 cup chopped walnuts

8 oz. pitted madjool dates

1/4 cup red wine

Pinch allspice

5 tablespoons date molasses


1. Oven to 350. Arrange the walnut in one layer on a baking sheet and roast in the oven for 5 minutes. Stir, and return to the oven for about 3 minutes longer, until the walnuts smell nutty and get darker in color. Let cool completely.

2. In a small pot over medium heat put the dates and wine. Cook until only about 1 tablespoon of wine remains, stirring occasionally.

3. Transfer dates and wine to the food processor, add allspice and date molasses. Process until smooth (or leave it chunky, if you prefer). Transfer to a bowl and mix in the walnuts in. Keep at room temperature.
