The Med version of the potato skin
A Mediterranean version of potato skins has the flavor of a bonfire and a variety of stuffings that melt into one another.
In the oven, foods have a tendency to bond and exchange experiences. As with human beings, when it comes to meat and vegetables this is a process, not something that takes place in an instant. Not all of them bond immediately or to the same degree. As a result of the high heat, baked goods soften first, each at its own pace, and then release their moisture, finally becoming dry and crisp.
