This week, Israel celebrates its 66th birthday, and the city that captures the soul of both Israeli and Palestinian food traditions is Jerusalem. In the West, it’s the capital of Israel, home to the nation’s best outdoor vegetable market, ancient Jewish restaurants and a chaotic high-end eatery where the chefs fling ice cream on the tables. In the East, it’s the site of the Dome of the Rock, the bustling stalls of the Old City, and a restaurant that’s been serving the same stuffed pigeon for decades.
When you walk into the right restaurants in Jerusalem, you can celebrate the cultures of both people, who give this city its unique flavor.
