I'd like to recommend Dov Weisglass' opinion piece at ynet, where he has it exactly right i.e. while Israeli law DESCRIBES Israel as a Jewish state, it does not DEFINE that phrase. The result: Israel is a "Jewish state" only insofar as its majority popln is "Jewish", and they *chose* to pull the levers of political power to ensure that the "Jewishness" of the state is apparent to all. But if the Jews ever lost their majority then they'd also lose that ability, and Israel would cease to be a "Jewish state". This is why the loyalty oath is a racist law i.e. it seeks to perpetuate the superiority of one group over all the others EVEN IF that group were to become a minority.
