Objections to a ban on kosher slaughter would be vindicating the right of store customers to obtain kosher food-- not of the store owner. A Christian-owned kosher market would have the same objections. No tenet of Judaism prohibits Jews from selling non-kosher meat, so the rights of the store or its owner are not at issue.
