Terms are very confusing: it depends on what people mean by "Jewish state" A "Jewish state" the way Israel is now organized means that non-Jews are second class citizens and it is closer to a slightly more liberal version of the Islamic republic of Iran than to any western liberal democracy. On the other hand, Israel could be a liberal non-confessional state which happens to have a majority Jewish population and a dominant culture that is largely identified with Jewish ethnicity and religion. This is closer to a western democracy. Hopefully it will evolve in this direction even if officially it keeps calling itself a "Jewish state".
