If I had a daughter, wanting to convert to Judaism (me being a roman catholic), would I take offense? No, only if this daughter would become an extremist, thereby becoming hostile to my own way of living, and it might become a problem in the future if this daughter would be a convinced roman catholic. But: love can be carried by the love of God, if she would raise her children in that perspective, what can go wrong? May be some people of jewish faith are afraid that their religion is not inspiring enough in itself, therefore taking such a defensive stance... Well, do something about it, show the world the shine and love and goodness of your faith. Or is religion purely a tribal matter?
