Actually, Israe's connection to Hummus is based on the original desire to shed off the "diaspora influence" from the early settlers in the 1890s and early 1900s. They wanted the Jews immigrating to the region to integrate on every level, lifestyle and culture which includes food. Hummus has always been from the Levant, and Israelis' adaptation to it is fairly recent. (That is not to say they don't have a right to, but it is definitely not as long-lasting as its neighbors).
