Have a stock of boiled potatoes in your fridge and when the craving arrives, use them to whip up this intensely flavorful comfort food.

Ingredients (for four servings):

6 medium potatoes

2 tbs. olive oil

2 tbs. butter

1 large onion, peeled and chopped

1 hot green chili pepper, chopped finely

1 tsp. sweet paprika

3/4 c. sweet cream (15%-fat cream can be used )

black pepper

coarse Atlantic sea salt

Preparation:

Boil the potatoes in their skins in a pot filled with water and a dash of salt, until they are almost ready (takes around 15 minutes, depending on the size of the potatoes ).

Drain and let chill for a few hours in the refrigerator.

Peel the potatoes and cut into cubes of approximately 1.5 centimeters.

In a large pan, preferably Teflon-coated, heat the olive oil and butter and fry the onion, chili and potatoes together over a high flame.

When the potatoes and onions are golden brown, add the paprika and black pepper and continue frying another minute or two. Add the cream, bring to a boil and remove from heat.

Season liberally with coarse salt and serve immediately.
