A healthy, easy and colorful dish that’s perfect for summer.

You can use Sea Bass or other firm fish like tilapia, mahi mahi, salmon and tuna.

To save time and effort use roasted beets available at Trader Joe’s, Whole Foods and other supermarkets.

Yields 4 first course servings

1/2 lb. sea bass fillet
Juice of half a lemon
2 tablespoons olive oil
Kosher salt
3 oz. roasted beets
4-5 small radishes
2 tablespoons chopped red onion
1/4 - 1/2 seeded habanero chili, finely chopped
1 teaspoon crystalized ginger, finely chopped
Leaves from 4 cilantro stems

1) Cut the sea bass to 3/4 inch cubes and put in a large bowl. Mix with the lemon juice, olive oil and salt and set aside.
2) Cut the beets to 1/8 inch cubes and put in a small bowl.
3) Cut the radishes to 1/8 inch cubes and mix with the fish. Add the red onion, habanero , crystalized ginger and cilantro and mix again. Taste and adjust the salt.
4) Arrange the ceviche in 4 serving bowls, sprinkle the beets on top and serve.
