You can get dried tomato powder online or make it yourself by grinding store bought dried tomatoes in a food processor.

Served 4-6

Ingredients:

½ butternut squash, peeled

Olive oil

Kosher salt

1 cup red quinoa

1 tsp salt

¼ cup olive oil

1/2 tsp cumin seeds

2 tsp dry tomato powder*

1 bunch green onions, chopped

¼ lb. feta (optional)

2 TBSP pumpkin seeds

Directions:

1. Turn oven to 425 degrees. Cut the butternut squash to 1/2 inch cubes. Arrange in a tray, coat with a little olive oil and salt and bake for about 10-15 minutes, until almost tender.

2. Cook the quinoa in 1½ cup of boiling water and 1 tsp salt until ready (about 15 minutes).

3. Heat the olive oil in a pan. When hot add the cumin seeds and after a few seconds (when you smell the aroma) add the tomato powder and then the green onions. Cook until the onions are soft.

4. In a large bowl mix the quinoa, squash and the onion mixture. When it cools a little add the crumbled feta, if using, and the pumpkin seeds. Adjust seasoning. Serve warm or at room temperature.
