This cake takes about 10 minutes to prepare, but it will be extra delicious if you use a homemade plum jam.
For 8x12 pan
2 1/4 cups self-rising flour
1 cup ground almonds or almond flour
1 cup sugar
2 sticks butter at room temperature
3 tablespoons water
2/3 cup homemade plum jam
1.5 lb. ripe plums, pitted and halved
1. In a food processor mix self-rising flour, almonds, sugar and butter. Add egg and water and run the food processor until it forms a dough.
2. Butter the pan. Press 3/4 of the dough into the bottom of the pan, and put the 1/4 left in the freezer for 20 minutes.
3. Heat oven to 350 degrees.
4. Spread jam over the dough in the pan and arrange the plums on top, cut side up. Crumble or grate the frozen dough on top of the plums and bake for 45 minutes. Serve warm or at room temperature.
