This honey cake is a real winner! It can be made ahead of time and frozen, and can also be served fresh.

Ingredients:

5 eggs
1 cup sugar
1 cup honey
½ cup oil
1 cup boiling water
2 teaspoons instant coffee
2 ½ cups flour
1 Tablespoons cocoa
1 teaspoon cinnamon
½ teaspoon ground cloves
1 Tablespoon vanilla sugar
1 Tablespoon baking powder

Instructions:
1. Beat the eggs with the ½ cup sugar well, until stiff snow forms. Set aside
2. Beat the egg yolks with the sugar well.
3. Lower the mixer and gradually add in the oil and honey
4. Mix the instant coffee with the boiling water.
5. Mix the dry ingredients together.
6. Gradually add the dry ingredients to the mixer alternating with coffee. Start with the dry and end with the dry.
7. Fold the whites into the batter.
8. Placce in a bundt pan or a long loaf pans.
9. Bake in a preheated oven at 180C (350F) for 45 minutes. The loaf pans will be done in 35-40 minutes.
