A combination of fruits and vegetables make for a wonderful refreshing salad! No cooking necessary making it perfect for a lazy summer day.
Ingredients:
1 14.1 oz can hearts of Palm
1 ripe mango
1 pint grape tomatoes, cut in half
½ lb snap peas
Dressing:
½ cup oil
¼ cup vinegar
¼ cup sugar
1 teaspoon salt
1 teaspoon mustard
2 cloves garlic, crushed
Instructions:
1. Slice hearts of palm, tomatoes and snap peas.
2. Cube the mango.
3. Combine the dressing ingredients. Pour over the desired amount of dressing.
