These muffins are great on-the-go for breakfast or snack, and are a fantastic way to use up extra bananas that always seem to be around.
Ingredients:
1 (4 oz) stick margarine
¾ cup sugar
1 egg
1½ cup flour
2 ripe bananas
1 tsp baking powder
1 tsp baking soda
1 tsp hot water
1 tsp vanilla extract
½ tsp salt
½ bag chocolate chips
Instructions:
1. Mash the bananas. Mix with the baking soda and hot water. Set aside.
2. Cream the margarine and sugar in the mixer. Add beaten egg and mix. Add extract, baking powder, flour, and salt. Mix well. Add the banana mixture and chocolate chips.
3. Pour into cupcake holders and bake at 400F for 15 minutes.
