Moussaka, kebab and escalope in East Jerusalem

Arab cuisine that is influenced by world trends is gaining in popularity. According to restaurateur Hussam Abbas, many chefs who are considered stars in the Arab world have moved to the Jordanian capital of Amman. Among these are Lebanon's famed Ramzi Shwayri of Lebanon and the Egyptian chef Osama el-Sayed.

The restaurants in Jerusalem's American Colony hotel fulfills the role of mediator between Arab cuisine and guests from France and Italy. Its Arabesque restaurant and coffee shop offers scones alongside baklava. The restaurant's menu, says Sami Suleiman, one of the chefs working there, includes Arab dishes such as moussaka with sumac, kebab and shishlik and Lebanese salads, as well as mussels, calamari and escalopes.

The hotel's food and beverages division is headed by Kevork Alemian, the founder of Chefs for Peace, which brings together Israeli and Palestinian chefs. With his assistance, the organization is able to enjoy good relations with some of the regular guests of the hotel such as former British prime minister Tony Blair, who is currently the the Quartet's envoy to the Middle East and has a suite at the hotel. Former U.S. president Jimmy Carter also stays there when he comes to the area, as does Robert de Niro, as well as representatives of the media from all over the world.

The members of the Israeli-Palestinian group also act as cultural ambassadors and are invited to cook Arab and Israeli food at gala dinners abroad. When musician Daniel Barenboim received a peace prize in Berlin in 2006, the dinner in his honor was prepared by Alemian and members of Chefs for Peace.
