How many otherwise five star restaurants that get awesome ratings by the commentators have kitchens that aren`t always immaculate. That may not be kashrut, but I am sure the people with the "deep pockets" eat at some of the finest eateries in the world may like to know if they are sitting down to a meal prepared in a kitchen that is "clean".

Other than that, why trash what you know nothing about. Indeed, one of the results of having some "kitchen snooper" in those places forces them to keep some level of cleanliness. Ah! did you know that kashrut also means no bugs in the lettuce? Then again eating bugs in your green salads doesn`t bother you, or does it?
