You are correct Binyamin Dissen, that the burden of proof is on the prospective convert (prior to conversion), but, once the Beit Din has created them Jewish the burden of proof to invalidate their conversion is on anyone who seeks to invalidate the legitimacy of the Beit Din`s determination.
The assumption must be that the Beit Din knew what it was doing.
Anything (and this includes ketubot) which are made by Rabbinic authority can, in theory, be overturned by Rabbinic authority, but, one needs an overturning authority of greater number and stature. Numerical superiority isn`t the problem. We can all count. Establishing greater stature, is, however, impossible.
The out that you seek is that an insincere convert is only allowed to marry other converts (or mamzerim.)
