From a halachic perspective, these rabbis are being narrow in the extreme. Judaism has a long history of accepting converts before Islam and christianity made it a death offense. Instead of building walls, we should be reaching back into our tradition to a time when we did not allow it to be defined by those who wish to spill our blood. One can go through all the steps of explaining to those interested why they probably don`t want to be Jewish without insulting them or their integrity.
