This is a big health issue for diabetics and others who try to eat a low-glycemic diet. Commercial matzoh is very glycemic, whether white or brown, and it`s very difficult to get your carbs during Passover without legumes. Even if I were observant I would insist on my right to eat legumes during Passover on health grounds.
