Duck and goose are similar in flavor and delicious,although very rich . As a child,our family raised geese for use on the holidays.They tasted wonderful. My mother prepared a stuffing of mashed potatoes.sage,eggs,onion,salt and pepper.The bird was roasted until golden,then taken out to cool while gravy was made in the pan,by adding water and cornstarch and bringing to a boil.The excess fat was saved for frying the world`s most delicious fried potatoes later. I prefer the earthiness of sage and potatoes to fruit sauces but it is undoubtably good also. A good duck or goose is hard to find if you don`t raise them.They must be fed proper food or the meat will be strong.Incidentaly,duck eggs are very good as well. The Chinese go to great lengths in Peking duck,this is good but seems unnecessary,like gilding the lily. Thanks for reviving a good memory. |
