Polenta is considered one of the oldest dishes in the world. With the advent of cooking food over a fire, human beings learned to soak various primitive grains in water for a long period to soften them. Soon, the cooked grains became the principal carbohydrate nourishing the human race. In Africa and South America, polenta is, to this day, a staple among many families.

The best polenta I've ever had was 1 week ago in mitzpe ramon at Chez Eugene's restaurant with a poched eggs and italian black truffles.
