Truffles, as we know, are a delicacy reserved for epicureans. This rare treasure grows underground, close to the roots of oak, hazel, and lime trees, with which the fungus forms a close symbiotic bond. Unlike other mushrooms that appear after heavy rain, the truffle hides forever, so mankind has developed sundry methods to find it, using pigs, goats, trained dogs, or by monitoring the movement of flies.

The difficulty in obtaining whole truffles is no reason to deprive ourselves of the pleasure. Truffle paste or slices preserved in olive oil will lend a dish a taste of yearning.
